When it comes to its curing and smoking process, the smokehouse at Uig Lodge on the Isle of Lewis says it treats each fish independently, even taking the weather into account. Judges praised the colour and buttery texture of the fish but were also wowed by its balanced oaky flavour and the touch of sweetness in the finish.
