Hannan’s investment in its salt-aging chamber certainly paid dividends, generating a fourth Top 50 product. This cut was said to be “tasty with exceptional fat: nutty almost like marrow”. One judge went even further, exclaiming: “It’s difficult to imagine how a steak could get any better than this.”
