This smoked Idiazabal cheese is made with raw sheep’s milk from Basque Country breeds and it really delivered on every level for the judges. Although smoky on the nose and in the mouth, the flavour of the cheese is never overpowered and those who try it will be rewarded with a fresh, crumbly and slightly sweet finish.
