Matured Goats’ Cheese – RIBBLESDALE CHEESE

With a sweet and grassy aroma, firm but crumbly texture and nutty flavours on the palate, this mature, natural-rind cheese had our judges going back for second helpings. The middle of the paste is clean, fresh and has a slightly caramelised milk flavour, while closer to the rind it becomes more “goaty” – but always balanced.
