The woody, nutty and smoky notes imparted by oak fires are balanced by a lovely sweetness in these moist, plump herrings, which are cured traditionally before the smoking process turns them into kippers that have become serial three-star winners. Judges were impressed all over again by the perfect levels of smoke, oil and salt in each bite.
