“The bard has been raised,” was one Great Taste judge’s comment after sampling this perfectly balanced rare-breed bacon. Dry aged on the bone for 10 days in a salt chamber, it’s then dry cured in a salt and sugar mix for a further 10 days before smoking over applewood chips.
